Baked Apples with Ice-Cream
Does anything scream SUMMER better than ice-cream? I don’t think so and this one is so easy that every now and then I literally just throw it together. Unless you’re counting your macros or calories, you can just “eyeball it” on the measurements (as my mom would say) . I’m sharing how I lighten mine up though, the brands listed aren’t sponsored, they’re just what I like.
Here’s what you need:
Apples (I like to use Honey Crisp)
Lemon juice
Raisins
Golden Raisins
Chopped Walnuts
Brown sugar (I use a brown sugar, stevia blend)
Butter (I use an Irish butter, olive oil blend from Costco)
Ice-Cream (I use vanilla Halo-Top)
Pam (coconut oil)
Directions:
-Fill a bowl with water and add some lemon juice to it.
-Core your apples and cut them in half & drop them in the lemon water
-Melt the butter (I don’t use a lot, maybe ½ cup for 4 apples)
-Take your apples out and place in a baking dish sprayed with Pam, skin side down
-Top with raisins, walnuts and brown sugar, then drizzle butter over the top
-Cover dish with foil and bake in 350 degree over for 40-50 minutes. I like mine pretty soft so just check them and take them out when they’re done to your taste
-Once they’re done to your liking, take them out and cool slightly before adding them to your favorite ice-cream
This is such a great summer desert! My family loves it and it’s a desert that doesn’t wreck my macros!
