So, I may have jumped off the wagon just a bit today to make these yummy Super Bowl treats. They are absolutely NOT low calorie but they are made with good, healthy ingredients. Every now and then you just want to have a treat and these will fit the bill. In an earlier post about developing better eating habits, I talked about the “80/20 rule”. We want to eat sensibly 80% of the time and then occasionally (20%) we can have a little wiggle room to enjoy some things we don’t eat on a daily basis. I couldn’t think of a better time for that 20% than a Super Bowl Party! Am I right?! These Granola Chocolate Almond Butter Cups are a total sweet treat.
Here’s a list of ingredients you’ll need:
Cups:
2 ½ C. granola
¾ C. chopped almonds
3-4 Tbsp. honey
3 Tbsp. almond butter
Filling:
12-16 Tbsp. almond butter (melted)
Topping:
9-12 Tbsp. dark chocolate chips (melted)
½-1 tsp. coconut oil
-Combine granola, chopped almonds, almond butter & honey. If the mixture is too dry, add a little more honey to get a sticky consistency.
-Grease the muffin tin & divide the mixture into 12 cups. Press the mixture well to hold together & make a dent in the center of each cup. Freeze for 5-10 minutes, until the cups are firm.
-Then, melt almond butter & pour into the center of each granola cup. Now, freeze for another 5-10 minutes, until firm.
-Finally, melt dark chocolate on top of almond butter. Chill until chocolate has set.
-Store in the fridge in air-tight container or freeze for longer storage.
