Twice Baked Stuffed Japanese Sweet Potatoes

Almost every weekend our family gets together for a big Sunday dinner & one Sunday, my son brought Japanese Sweet Potatoes. He roasted them with garlic & black pepper & they were a total hit!  To me, they taste like a sweet potato with more of the consistency of a white potato. They look similar to a sweet potato but are white on the inside. You can prepare them like a traditional sweet potato with cinnamon & sweetener, but I actually prefer these prepared savory. So when I wanted to make some twice baked potatoes the other day, I thought it would be great to try it with these Japanese sweet potatoes. I purchased them at one of our local Asian Markets.

You can use other potatoes as well; I just always tend to go with a sweet potato over a white potato because of the nutritional benefits. I was excited to try this with these Japanese Sweet Potatoes because they are a high source of fiber & I thought the combination would be delicious!!

*Here’s what you’ll need for 2 potatoes (servers 4):

2 Japanese Sweet Potatoes (baked & cooled)

Pam

1 c chopped onions

4 oz chopped mushrooms

6 oz diced chicken breasts

1 c  plain greek yogurt

¼ c  shredded cheese

salt & pepper to taste

*Note on the potatoes: I found that baking them without wrapping them in foil & very lightly spraying them with Pam makes the skins sturdier & easier to hold together after slicing them and taking the potato out.

-Preheat your oven to 400 degrees.

-Spray a skillet with Pam & add your chopped onions & mushrooms & saute’ until soft.

-Slice your potatoes and take the insides out & place in a bowl & add salt & pepper to taste.

-Use a fork to slightly mash the potato (I like them a little chunky) & then add your onions, mushrooms, diced chicken & greek yogurt. Mix together.

-Carefully stuff the ingredients back into the potato skins (they will be really full) & place them on a baking sheet & then put them in the oven for about 10-15 minutes or until hot.

-After they’re hot, take them out and top lightly with cheese. Then put them back in the oven just till the cheese melts.

Serve alone or with a salad. These Twice Baked Potatoes make a great, healthy, comfort meal for a cold, winter day! Remember, healthy does not have to be boring!!
