Sometimes you just need to eat a cookie.
But just because I need a cookie doesn’t mean I have to throw out all reason, LOL! So I decided to make these a little lighter to fit my eating plan. I’ll add in the calories and macros at the bottom!
It’s important to note that sometimes I make regular chocolate chip cookies. Remember, food is not good or bad-it’s just food. I just wanted to try my hand at making something lighter and I think these turned out great!
Lighter Chocolate Chip Cookies
What you’ll need:
- 2 c All Purpose Flour
- 1 tsp Baking Soda
- ½ tsp Salt
- 5.3 oz Applesauce
- 1.3 c Swerve Sugar Replacement
- (*I’m going to try using ½ Swerve Brown Sugar next time)
- 2 Eggs
- 1 tsp Vanilla
- ½ c 60% Dark Chocolate Chips
Directions:
-Mix the first 3 ingredients together and set aside.
-Mix Applesauce & sugar together, then add eggs and vanilla and mix.
-Stir in chocolate chips
-Place in frig for about 30 minutes to firm up. The dough is really sticky!
-Preheat oven to 350 degrees.
-Take cookie dough out of frig and form in 28 balls and place on a greased cookie sheet and slightly mash them down to form more of a cookie shape.
-Bake for about 11-16 minutes till done, but don’t over bake.
