It’s almost Halloween & the kids will have candy EVERYWHERE! If you’re like me, that temptation is a little too scary, so my solution is to have a treat available I can have instead of grabbing a handful of M&M’s 😉
You might think this an unusual ingredient for truffles, but trust me… these are delicious! I found this recipe at Nutrition To Fit. She has amazing recipes, you should definitely go check out her site!! Anyway, one thing to remember is: make sure you use 86% dark chocolate. It’s important!! These are so good! I’m going to make them now & then I think I’ll be making them again for Thanksgiving & Christmas!!!  🙂

Avocado Truffles:
-1 avocado
-2 oz. dark chocolate (86 %)
-1-2 TLBS maple syrup
-2 tsp sweetener (original recipe doesn’t call for this but I like mine sweeter! I used a —sugar/stevia blend & it worked great)
-cocoa for coating

Instructions:
-melt your chocolate (I did mine in the microwave)
-Peel & pit your avocado
-Puree avocado until smooth
-Add all the ingredients together & puree again till everything is combined & smooth
-Put into a freezer safe container & transfer to the freezer for about 30 minutes or until it’s firm enough to roll into balls
-Roll into small (truffle size) balls then coat with cocoa
-Put them in an enclosed container & store in the frig until serving (you can keep these for up to about a week)
