Chicken Stroganoff

It’s that time of year again. Yesterday it was almost 90 degrees & tomorrow it’s going to be in the 50’s! As much as I love Fall, I’m sad to see Summer go, but at least with the cooler weather, we can pull our boots out of the back of the closet & enjoy some great comfort food!!

When I was little, my mom used to make Beef Stroganoff & I LOVED it. I know most people eat stroganoff over noodles, but my mom always served it over rice. It was delicious, but to make it a little more “macro friendly” for myself (basically, a lower & better fat content) I switched things up . First of all, I decided to use ground chicken instead of beef & in place of the sour cream, I use greek yogurt. Second, I changed the rice. Rice is absolutely fine, but I wanted less carbs so I decided to try different options & this stroganoff is great with a lot of different sides. I’ve served it over a small baked potato, riced cauliflower, zucchini noodles & butternut squash noodles. It’s all good! So use your imagination, you may come up with something even better!

Here’s what you need for 4 servings:

1 lb     -Ground Chicken

6 oz    -Fresh Mushrooms

½ c     -Chopped Onions

8 oz    -Plain Greek Yogurt

1 can   -Cream of Chicken soup

2 oz    -Milk

Lawry’s season salt

Salt

Olive oil spray

Spiral Zucchini Noodles (or whatever you’d like to serve it with)

In a bowl, mix together the greek yogurt, soup & milk. Set aside.

In a skillet sprayed with oil, add your onions & mushrooms and cook until tender & browned. Remove them from the skillet & add ground chicken with lawry’s (I sprinkle liberally) to the skillet. Cook until it’s completely done & add the onions & mushrooms back in along with the yogurt mixture & heat through. Once it’s done, I taste it to see if I need more salt & just add it accordingly.

To prepare the zucchini noodles, I use paper towels to dry them out some & cook them for a couple of minutes with a little butter & veggie seasoning.  YUM!

To figure my macros, I added all the ingredients in My Fitness Pal App/recipes (excluding the zucchini noodles) and this is what it gave me for 1 serving of Stroganoff:

Total Calories: 269

Carbs: 13 g

Fat: 10.2 g

Protein: 30.5 g

    Brings back good memories. Stroganoff was the first meal you made for all of us.
