Who doesn’t love a good taco? I loooooove tacos!! All tacos… chicken, fish, shrimp, beef, hard, soft… you name it, I’ve never met a taco I didn’t like! These Shrimp Tacos with a Greek Yogurt Sauce are super-fast & easy, delicious & healthy too! And even better, this is one of those recipes that’s more of “to taste” than “exact amounts” so really, how easy can it get? You can use fresh shrimp or frozen as well. Frozen cooked shrimp is something I like to always keep on hand to help with meal prepping. Before you get started, here’s a list of things you’ll need:
For Sauce:
Plain Greek Yogurt
Salsa Verde
This sauce is great for any kind of taco, but I’ve also used it in other things as well. I usually make about a cup or two & keep it in the fridge. Be sure you check the date on your yogurt & make note of it on the sauce.
To make, add about ½ – ¾ cup of salsa verde to 1 cup of greek yogurt & mix well. You can also change this up according to your personal taste.
For Fish Tacos:
Shrimp ( I use 3 or 4 medium shrimp per taco)
Shredded Cabbage (about a cup)
Sliced Avocado
Soft Tortillas (I use corn)
Adobo Seasoning
Olive Oil spray
Salt
If you’re using frozen cooked shrimp, thaw beforehand. Take the tails off your shrimp & add them to a skillet sprayed with oil & sprinkle adobo seasoning liberally. It only takes a few minutes to warm the shrimp, so be careful not to overcook it. When it’s finished warming, I add a little salt. I like to have a separate skillet to warm my tortillas. When it’s all finished, just build your tacos & you’re ready to eat!!
