Beef Short Rib Tacos

Happy Monday, I hope you had a wonderful weekend! I thought I’d share one of my family’s favorite recipes with you today and guess what? It’s not chicken!!  We eat A LOT of chicken at my house because it’s good and because it’s lower in fat. This Sunday though, we had Beef Short Rib Tacos. I typically eat red meat only once a week, though some weeks it could be more. These particular tacos have a significantly higher fat content but I just plan for it. Eating healthy doesn’t mean you give up all the things you love. It just means being mindful and planning. My family loves these tacos, and like most everything else I make they are super easy to prepare.

All you need is:

Beef Short Ribs (I use boneless for this recipe)

Seasoning (I use Lawry’s, salt & pepper)

Corn Tortilla shells

Avocado

Pico De Gallo

Lime

To prepare:

-Season your ribs with the seasoning of your choice, spray or line a crockpot and put all your ribs (I make 15-17 ribs) in and set your crockpot to low. Cook them for 10 hours and then remove ribs from crockpot & shred the beef.

-Slice your limes & avocado

-Heat the shells

-Add the beef, pico, avocado and squeeze lime over the top and serve.

DELICIOUS!
