Throw Back to my Childhood!
So the other day I was thinking about a dish my mom used to make when I was a kid, that I loved… I don’t know what the actual name of it was, but we called it Wild Rice & hamburger. My mom was the queen of cost conscience meals and this one was a staple at our house and it heartily fed all 6 of us! This was one of my favorites! Anyway, I wanted to come up with a version that was a little more macro friendly for me so that’s what I did! I replaced the rice with cauliflower rice and added onions and mushrooms. Y.U.M.
Here’s what you need:
3 oz. lean ground beef (drained & rinsed)
170 g. riced cauliflower (I used frozen for convenience, but fresh would be great)
33 g. diced onions
1 oz. diced mushrooms
vegetable seasoning to taste (I use McCormick’s perfect pinch vegetable)
Pam or a little olive oil (about ½- 1Tlbs)
Salt & Pepper to taste
Green onions for topping (optional)
Directions:
~Cook the ground beef until done. Drain, rinse, and set aside
~Add Pam or Olive oil to pan, then onions and mushrooms and sauté
~Add cauliflower rice and heat through
~Add beef and veggies together and cook for a minute to let all the flavors come together. If you use Pam instead of the olive oil, you can add a pat of butter at the end if you like.
~Top with green onions and serve!
