Black Bean Soup

Hey there! How was your Thanksgiving?

I hope it was filled with family, friends, and wonderful food!I got to spend the day before with my mom, shopping and cooking. By now you’re probably completely “done with cooking” for awhile and over the turkey leftovers. I really only spent a couple of days prepping and cooking for Thanksgiving but it sure felt longer, lol! It’s always a lot of work but it’s fun work!

So, on to something non-turkey related! Oh man! Have I got a recipe for you! I found this from Nutrition to Fit and it’s DELICIOUS! Besides being really tasty, this is possibly one of the easiest recipes I’ve ever made. If you haven’t read Lindsey’s blog, you need to head over there and check it out.

You only need 3 ingredients for this soup:

2 cans no salt added black beans (don’t drain, you need the liquid)

16 oz jar of salsa (I like Herdez)

2 Tbs lime juice (1 lime)

Directions:

Combine 1 can of beans, salsa and lime juice in a blender and blend until combined (about 30-60 seconds). Stir in remaining can of black beans. Heat in a pot on the stove or in a bowl in the microwave for a couple of minutes.

THAT’S IT!

I topped with avocado, cheese and greek yogurt. Mmmmmmmmm….
