I think I always say this, but for real… This is one of my top favorite dinners! It’s delicious and easy to put together and the best part is you can opt to use a rotisserie chicken if you don’t have time to make your own!
Here’s what you need:
- -cooked shredded chicken (you can make your own or use a rotisserie chicken)
- -fajita or taco seasoning
- -black beans
- -green chilis
- -cauliflower rice (optional)
- -your favorite tortillas (I use Ole High Fiber tortillas)
- – green or red enchilada sauce (I make my own or use Frontera)
- -assorted color peppers (I use whatever I happen to have on hand)
- -onions
- -shredded cheese of your choice
You decide the amounts to use depending on what you like. Measure each ingredient, write it down and I’ll tell you how to figure the macros below.
Directions:
-Dice onions and peppers and sauté in a skillet.
-While those our working, add taco seasoning (to taste) to your cooked shredded chicken.
-Next, add black beans, green chilis and riced cauliflower to chicken.
-Set sautéed veggies aside while you assemble the enchiladas
-Decide how many enchiladas you’re going to make and divide the chicken mixture up evenly between them. Roll up enchiladas and place in a baking dish sprayed with cooking oil. -Top enchiladas with your favorite enchilada sauce, sautéed veggies and shredded cheese. Place in oven preheated to 350 degrees for about 30 minutes or so until hot and bubbly. DELICIOUS!
To figure your macros:
Go to recipes in MFP and hit “Create a Recipe”.
Enter ingredients and amounts manually. You can type it in and look it up or you can scan barcodes if you have them available.
Next it will take you to recipe information.
There you can add in the name and how many servings. I put in how many enchiladas I’m making so the info will be for 1 enchilada.
Once you add in all the info, you can hit save and it will give you all your macros AND it will keep it for next time. You only need to do it once!
