Chocolate for breakfast?

They don’t have to be for breakfast, but why not?

Skinny Double Chocolate Banana Muffins

Ingredients:

*3 medium ripe bananas, mashed

*1/4 c honey

*1 tsp vanilla

*1 large egg

*2 Tbs liquid coconut oil

*1/2 c plain greek yogurt

*1 c whole grain millet flour (you can use different flour)

*1/2 c unsweetened cocoa powder

*1 tsp baking soda

*1/4 tsp salt

*1/2 c chocolate chips, divided  (I used dark chocolate chips)

Directions:

  • Preheat oven to 350 degrees F.
  • Spray 12 muffin tins with cooking oil.
  • Mix wet ingredients together until well combined.
  • Add dry ingredients to wet ingredients & mix until well combined.
  • Stir in 1/3 c of chocolate chips.
  • Pour batter into greased muffin cups.
  • Sprinkle remaining chocolate chips on top.
  • Bake for 23-27 minutes until tester comes out clean.
