Let’s talk snacks for a minute! When you’re trying to eat healthier, this can be a real stumbling block. Fresh fruit and veggies are a good go to, but sometimes you just want something different and so you might be tempted to reach for some pre-packaged options. While there are some smarter options available, the easy stuff is often full of ingredients we’d rather avoid.
When meal prepping for the week, why not prep a few snacks as well?
These Bliss Bites are full of good ingredients and they’re easy to fix! When you need a snack for that mid-day slump or a long gym session, you can pack a couple of these bad boys! These can be prepped and then stored in the freezer and you can take them out as you need them. This recipe is from @flora_and_vino . You should check them out for the original recipe (I added the white chocolate chips) and more yummy dishes!!
Raspberry Cashew Cheesecake Bliss Bites
w/White Chocolate Chips
Ingredients:
100 g pitted dates
1/4c cashews
30 g oats
65 g cashew butter
7 g freeze-dried raspberries & more for coating
1 tsp. vanilla
22g white chocolate chips
Directions:
~Place dates in a food processor and pulse until it forms a smooth paste.
~Next, add in oats, cashew butter, raspberries and vanilla and pulse again until they are well combined.
~Next, add in your cashews and pulse until they reach the consistency you like.
~Take extra freeze-dried raspberries and place in a ziplock bag and then mash them to make raspberry “dust”. (optional)
~Divide mixture into 9 balls and roll in freeze-dried raspberry “dust” (optional).
~Serve immediately or store in an airtight container in the frig for to one week.
~Freeze for longer storage.
