If you know or follow me at all, you will undoubtedly hear me go on about how much I LOVE eggs! My favorite meal is breakfast but I can (and do) eat eggs for lunch and dinner too!
I also won’t mention any names but someone in my house is a pretty picky eater and even he loves this Frittata. It’s definitely a crowd pleaser!
What you need:
- 33g Flour
- 1 Tsp Salt
- 1 Tsp Baking Powder
- 30 Tbs Liquid Egg Whites
- 3 Large Eggs
- 84g Shredded Cheddar Cheese
- 8 Tbs Fire Roasted Green Chiles
- 2 C Low Fat Cottage Cheese
- 4 Tbs Herdez Salsa Verde
- 28g Mexican Blend Shredded Cheese
- 6 pieces of cooked & crumbled bacon (optional)
Directions:
-Combine dry ingredients in a bowl and mix well and set aside.
-Add egg whites and eggs to a mixing bowl and beat on medium-high speed for 2-3 minutes.
-Gradually add dry ingredients into egg mixture.
-Stir in cheddar cheese, cottage cheese, and salsa verde.
-Pour into a 13×9 baking dish sprayed with cooking spray and sprinkle mexican cheese on top.
-Bake uncovered, at 350 degrees for about 45-50 minutes or until the center appears to be cooked through.
Serves: 8
