Black Bean Avocado Brownies

I have a huge sweet tooth and I’m always trying to find something a little healthier to enjoy. My training partner gave me this recipe and it is SO GOOD! My grandson loves to help me in the kitchen so we made these brownies last week and he loved them too!

Black Bean Avocado Brownies

Ingredients:

1 can (15 oz) black beans, rinsed well and drained

½ c unsweetened cocoa powder

3 eggs

¼ c coconut oil (melted)

¾ c sugar (I used monkfruit)

¼ tsp salt

1 tsp baking powder

1 tsp vanilla

1 avocado (medium to large)

dark chocolate chips (for top of batter)

Directions:

-Preheat oven to 350 degrees

-Mix all ingredients except the chocolate chips in a food processor

-Spray an 8×8 pan with cooking spray & spoon batter into the pan & top with chocolate chips

-Cook for 38-40 minutes (brownies are done when you insert a knife or toothpick and it comes out clean)

-Let brownies sit for about 20 minutes before cutting

-Store in the frig for 3-5 days

Notes:

*For the sugar, the recipe called for ½ white sugar & ½ brown. I used Monkfruit but you can sub ¼ c applesauce & ½ coconut sugar

*You can also top with peanut butter

    That brownie recipe is a winner. Teaching the grandsons healthy eating is a bonus.

    These are super delicious, especially when you know how good they are for you! I was tempted to leave out the chocolate chips, but glad I didn’t. They really add to the brownies! This is one of my favourite recipes. You seriously cannot taste the avocado and black beans at all. My only drawback is how much sugar is in the recipe, however in saying that it is a brownie recipe is meant to be sweet. Next time I will freeze a portion of the brownies because I just ate them too fast!
