You guys, it’s cold! Seriously! I feel like the only thing to do with this weather is put on my leggings & sweatshirt & make some soup! This Creamy Taco Soup will be on my menu this week! It’s so good & creamy, you’ll want to come back for seconds!
Creamy Taco Soup:
3/4 cup onions
2/3 c green peppers
2/3 c red peppers
-Sauté until tender, remove from pan & set aside:
16 oz ground turkey, cooked
-Then to turkey add:
1 can of diced green chilies
1 can of diced rotel tomatoes & green chilies
1 can of fire roasted tomatoes
1 can of black beans (drained & rinsed)
5 TBS of taco seasoning
2 c chicken stock
-Add sautéed veggies back in:
-Cook till heated through, then add in:
2 ½ oz cream cheese
-Continue heating soup till cheese is melted, then serve with your favorite toppings!
Calories per cup of soup (no toppings) : 172 Carbs: 14g, Protein: 15g, Fat: 7g
