Grilled Chicken Skewers with Tzatziki Dip

Happy Monday! I hope you’re off to a great week! If you need an idea for dinner tonight, let me help! Here’s a great recipe I found on Instagram. When I came across it, I knew immediately I had to try it out. The dip is so simple and it just screams Summer! These skewers are perfect for grilling but I don’t grill a lot (that’s my husband’s department) and I’m not afraid to switch things up and make these in the oven! Truth be told, even when we do skewers on the grill, I start the chicken in the oven and he finishes them on the grill. I’ve found it keeps the chicken more moist by cooking them partially in the oven first.

Grilled Chicken Skewers with Tzatziki Dip:

1.5 lbs. boneless, skinless chicken breasts, cut up into 2 inch pieces

1 Tbsp avocado oil or olive oil

1 tsp dried oregano

1 tsp dried thyme

1 tsp cayenne (I used ½ tsp)

salt and pepper to taste

After chicken is cut up, place in bag with ingredients and marinate for about 30 minutes. Cook on a grill or preheat your oven to 350 degrees and bake for 30-40 minutes or until cooked thoroughly. Just a note on the cayenne; even only using ½ tsp was a little hot for me!

Tzatziki Dip:

1 cup plain fat free greek yogurt

½ cup seeded, grated cucumber

2 Tbsps chopped fresh dill

2 Tbsps fresh lemon juice

3 fresh garlic cloves, minced ( I used minced garlic)

Salt and pepper to taste

Mix everything together and serve with your chicken skewers. Just a note: this dip is also good with fish. I made this dip last week with chicken and then had it with fish another night!

    Looks delicious!! Thanks for the hint on the cayenne as I do not like hot!! I also never even thought about making my own tzatziki dip before. It does not look that difficult at all!!
