I think I’ve said it once or twice (or a hundred) times, how much I love eggs. I eat them all the time! And this is a recipe I make quite often. We have it for breakfast, lunch, and dinner too. My husband is a pretty picky eater and he really enjoys this one, so it’s a crowd pleaser for sure!
Here’s what you need:
- Egg whites: 460g
- Eggs: 2
- Shredded Cheddar Cheese: 84g
- Shredded Mozzarella Cheese: 112g
- Cottage Cheese: 113g
- Diced Fire Roasted Tomatoes: 32g
- Salsa Verde: 12 Tbsp
- Coconut Flour: 1 Tbsp
- Baking Powder: ½ Tsp
- Salt: 1-2 Tsp
- Turkey Sausage or Bacon (Optional)
Directions:
-In a bowl, beat eggs and egg whites for 2-3 minutes on medium-high speed.
-In another bowl, combine coconut flour, baking powder & salt. Make sure you break up any clumps and then add gradually to egg mixture.
-Stir in cottage cheese, diced tomatoes, salsa verde, & mozzarella (and sausage or bacon if desired)
-Pour eggs into a 13×9 dish sprayed with Pam and top with cheddar cheese.
-Bake uncovered on 350 degrees for 40-45 minutes till cooked through. I use a knife to check. Insert knife into the eggs and if it comes out clean I take it out.
