Happy Monday! I hope you all had a relaxing weekend!
Summer is quickly coming to an end (no matter how hard I wish it not to be). I will however; enjoy every last second of this wonderful warm weather! There’s still plenty of cookouts to be had and even if you’re eating indoors this Cucumber Watermelon salad is about as refreshing as it gets!
I’ll just admit it right here that I’m on social media entirely too much but as usual that’s where I found this delicious salad. I only wish I could remember where I found it! What I really like about this salad is that you can pretty much just throw it together without a lot of measuring. I’m always up for EASY!!! Just add the ingredients to taste and you’re done! For those of you who are counting macros or calories, I’ll add the measurements I used. I’ve made it both ways, I measured when I made a small batch for myself the other day.
Here’s what you need for 2 servings:
150 g Cucumber, cut up (I used baby cucmbers)
315 g Watermelon, cut up
1 oz Feta Cheese
5 Mint Leaves (chopped small)
Mix everything together and store in an airtight container in the frig. I kept mine for 2 or 3 days.
