Chicken Chili Verde

This is a recipe I make all the time. It’s so easy and versatile and it tastes great! If you want something you can just throw in and forget about, this is it! It’s perfect for the weekend! Ingredients:

  • 2 lbs Chicken Breasts
  • 4 oz can of Fire Roasted Green Chilies
  • ½ tsp Oregano
  • ½ tsp Cumin
  • 12 oz jar of Salsa Verde (I like Herdez)
  • ½ tsp salt
  • ½ tsp pepper

For Serving:

  • Cauliflower Rice, Lettuce (for lower carb option), or tortilla
  • Lime
  • Shredded Cheese
  • Green Onions

Place ingredients in a crock pot sprayed with cooking oil. Cook on high for about 4 hours till completely cooked through and tender. It should just fall apart when you start shredding.

Pick however you’d like to serve it (you can’t go wrong) and ENJOY!
