Chicken Pot Pie Soup
I feel like I’m always talking about comfort food but let’s face it, comfort food is what it’s all about, right? This is comfort food at it’s best! This Chicken Pot Pie Soup is really healthy and will hit the spot! It’s good served by itself or you can serve it with bread as well.
Here’s what you need:
1 lb. Chicken Breasts *Sprinkled with Season Salt, I use Lawry’s
1 can of Healthy Request Cream of Chicken Soup
½ c Chicken Stock
¾ c Chopped Carrots
¾ c Chopped Onions
¾ c Chopped Celery
2 tsp. Parsley
1 tsp. Salt
1 tsp. Pepper
¾ c Corn
¾ c Frozen Peas
*Place carrots, onions, celery, parsley, salt, and pepper in crockpot with soup and chicken stock. Mix well.
*Sprinkle the chicken breast with season salt and nestle them in the mixture and spoon mixture over the chicken.
*Cook on low for about 6 hours. Remove chicken from crockpot and shred. Add chicken back in along with corn & frozen peas. Stir and allow to finish cooking (about another 30 minutes)
*Serve alone or with bread.
A couple of notes:
- This is pretty thick. You can add more stock if you like more broth.
- This makes about 4 servings.
