Corn Salsa

Spring is here (more or less) and I’m getting excited for warm weather, cook-outs and all the summer dishes! Right now, I’m in the mood for some Corn Salsa!! It’s delicious and easy to prepare. It’s also one of my favorite things to take to summer cook-outs and family picnics!

 Here’s what you will need:

4-5 On the Vine Tomatoes (diced)

1-1½ C. Frozen Corn

1 Small Onion (diced)

½ Jalapeno (take the seeds out & dice)

3 Tbls. Lemon juice

1 Tbls. Parsley

Salt to taste

Cracked pepper to taste

Directions:

Set the corn out to thaw while you cut up the tomatoes, onion and jalapeno. Once everything is ready, add all the ingredients and mix well. Store covered in refrigerator for 3-4 days.

This Corn Salsa is great made just like this but it’s even better when all the fresh veggies start coming in from the garden!
