Egg Roll in a Bowl

Happy Hump Day! It’s been a little crazy around my house so I’ve been away from the blog for a bit. I’m glad to be back. I am currently sitting in one of my favorite coffee shops (if you live in Indy, you need to check them out) and ready to write!

So guess what?  I’m sharing a recipe today and it’s NOT chicken! I’m a creature of habit and I do eat a lot of chicken. It’s versatile, it’s low in fat and let’s not forget, it’s really good! But every now and then I like to switch it up and this pork recipe is super yummy! You know what else? You can substitute any other meat here too, even CHICKEN! These are so good and less calories than traditional egg rolls. I found this recipe at Unbound Wellness. She’s got some great healthy recipes. Be sure to check out her blog!

Is it weird that I have never cooked with ginger? I feel like I’ve led a sheltered life or something? I’ve seen it in the store but have never ever used it. Oh my! It was really good. I will definitely be using it more in the future!

One thing to mention is that this recipe also has an optional sauce you might want to try. I opted to leave it out because I enjoy my egg rolls all on their own. When I was little and we would go to a Chinese restaurant I always ordered egg rolls and no sauce and at least that much has never really changed.

Here’s what you’ll need:

1 lb. ground pork

1-2 tlbs. sesame oil

1 white onion, diced

2 cloves garlic, minced (I just used minced garlic)

1 tsp. grated ginger

12 oz. coleslaw mix

2 tsp. apple cider vinegar

3 tsp. coconut aminos (I used soy sauce)

2 tlbs. green onion

Directions:

-Add ground pork to a skillet, season with salt and pepper and cook till done. Drain the meat and set to the side.

-In the same skillet, add oil and sauté onion, garlic, and ginger on medium heat until fragrant and onions are translucent.

-Add coleslaw mix, apple cider vinegar, and soy sauce and cook for 4-5 minutes until coleslaw mix reduces and softens.

-Add pork back in and mix well. Continue to cook a minute or two to reheat and let all the flavors incorporate together.

-Remove from heat, place in bowls and top with green onions.
