Sugar Cookie Protein Balls

Need an energy snack to throw in your bag for the gym? These protein balls are delicious and they’re perfect for Christmas time! I found these at “Butter Addict Gone Paleo”.  As usual, I switched up the recipe to fit my needs but you can find the original recipe by clicking on the link above.

I love this recipe & it’s very versatile. Just think of all the goodies you could add to this! Peanut butter, Cocoa, Almond flavoring, Espresso…. the list could go on & on.

Sugar Cookie Protein Balls

Ingredients:

1c raw almonds

½c coconut oil

2-3Tbs water

1c almond flour

½c vanilla protein powder (I use unjury)

3Tbs maple syrup

2tsp vanilla

¾-1tsp cinnamon

¼tsp Himalayan pink salt

Directions:

-In a food processor, grind the almonds with the coconut oil & water

-To that mixture add the rest of the ingredients

-Form balls with dough (makes about 34)

-Freeze for about 30 minutes or chill for 1-2 hours

-Store in the refrigerator
