Apple Cinnamon Overnight Oats

Happy Monday! Here’s one of my favorite breakfast recipes. I’m all about quick & easy, but it still has to taste great & this checks off all the boxes! Oats are not only good, they’re really good for you & they’re a great carbohydrate. I used to never eat breakfast. I wasn’t hungry in the morning & all I wanted was some coffee & I thought I was good to go.

NOT SO.

It’s true, you need to eat breakfast. We expect so much of our bodies: get up, shower, get dressed, take the dog out, get the kids up & ready for school, fix lunches, get them on the bus, hit the gym or head out for a full day of work…. Our body needs fuel. We don’t expect our car to run without gas, we shouldn’t expect anything different from our bodies.

Now, how your start your day will be the gauge for how much & when you eat. I start my mornings in the gym so I eat a little something about an hour or so before & then I eat a regular breakfast (like these oats) when I get home. This is one of those trial & error things. I never wanted to eat before the gym because if I did I’d get nauseous during my workout, but when I didn’t eat at all, I’d run out of steam & that was frustrating. That’s when I tried to eat a snack (a few carbs & protein) & I make sure to eat it about an hour before my workout & that seems to do the trick for me. I can hit my workout hard, without the nausea. When I get home, I’m hungry & ready for a good breakfast. Getting healthy is more than just working out & training. Our bodies need good nutrition as well. If you give it what it needs, you’ll reap the rewards!

Part of the process is making sure you have good options available. These Overnight Oats are great. You can make them ahead of time so they’re ready when you need them- no standing in front of the frig trying to find something healthy when you don’t have a lot of time!

Apple Cinnamon Overnight Oats:

3/4 c Old Fashioned Oats (not instant)

2/3 c Almond milk

1/3 cup diced apples

stevia to taste (I use 2 or 3 tsp)

1 tsp vanilla

1- 1 1/2 tsp cinnamon

Place all ingredients in an airtight jar & shake to mix well. Chill in the frig overnight & THAT’S IT! Enjoy!! You can warm them in the microwave or eat them cold (I love them cold when it’s warm outside).
